    OVERVIEW

    Learn to prepare one of Senegal’s national dishes in a hands-on cooking class at a restaurant in Dakar. Your culinary instruction will begin at a local market where you will gather the necessary ingredients for Chicken Yassa, a dish popular across West Africa. The chef will show you how to pick out the freshest, most flavorful ingredients such as lemons, olives and Scotch bonnet chili peppers. Although yassa can be made with lamb and fish, it is traditionally prepared with chicken in Senegal, where this comfort food dish originated. In essence, the chicken is browned, the onions are caramelized and the other ingredients are added in stages so as not to overwhelm the flavor. For instance, the hot chili peppers are put in as the very last step. Chicken yassa is typically served with a side of steamed white rice, but the chef may have another suggestion. When the dish is ready, it will be served for lunch.

Initial highlights along the way include Kermel Market, the President’s Palace and see the New Great Mosque Massalikun Jinaan with its impressive architecture. A photo stop awaits you at the Door of Millennium, which was built in 2000 to symbolize Senegal’s entry into the new millennium. For a look at Senegalese college life, you will pass by the University and see its moto “lux mea lex”. Upon reaching the Mamelles area, the highest point on the peninsula, you will enjoy yet another perspective of the city. The lake is less than a mile from the Atlantic Ocean and salt was harvested there for years until precedented flooding changed the color and composition of the water. Enjoy a lunch with Senegalese traditional dishes at Keur Salim lodge then get a glimpse into the lifestyle of the traditional Wolof village of Noflaye.

    OVERVIEW

    Accompany a Senegalese art professor to two museums that focus on early African art and meet some of the country’s contemporary artists. While browsing the IFAN Museum, you will see a collection of ritual masks, weapons and musical instruments that lend insight into the regional traditions and history. The carvings on the wooden granary doors are particularly interesting as they are highly symbolic. The Museum of Black Civilizations has an even wider focus by celebrating Black cultural contributions worldwide. Many of the artifacts have been returned to Senegal after colonists plundered them over the centuries. Revered Senegalese poet and the country’s first post-colonial president, Léopold Sédar Senghor initiated the creation of both museums. You will mingle with some of West Africa’s most talented artists at their ateliers, where you will see works in progress. To enhance your understanding, the artists and the art professor will describe how African art is changing.

    OVERVIEW

    Take the ferry to notorious Gorée Island, where beginning in the 15th century countless slaves were held before being shipped to the New World. Now a UNESCO World Heritage site, this island was once the largest slave-trading center on the African coast. In the House of Slaves, you will hear the curator’s lecture detailing the cruelty of that time period. You will then visit Saint Charles Borromeo’s Church and a fortress with a towering monument memorializing the Africans who were brutalized and dehumanized during the slave trade. During free time that follows, you can wander about the stark island and perhaps see the buildings and cells that housed the men, women and children who were shackled around the neck and arms. The Gate of No Return marks the spot where the Africans saw their last glimpse of their homeland before boarding ships for the New World. Your time on Gorée Island will be unforgettable.
